I mainly do this as a way to seperate the beer from the huge amount of trub that develops in the primary fermenter so that I get as little of it in the final product as possible. As to off flavors. I have personally had it happen to two batches. I brewed 2 batches in 2 days a couple years back and got them into the primary. Then I got lazy and they stayed in the primary for about 7 weeks. I ashamedly have to admit that I still have about 1/2 of each of those batches in a side room in my basement and have no intent to ever finishing them. They both have an odd flavor. The one batch was a recipe that I have brewed many times and that was the only time it came out poorly. In the end I feel everyone has to develop their own style and technique. We all get started in this hobby by reading some books and websites and maybe with some friends help. When you put it all together, you just have to find what works for you and don't let anyone tell you that you are doing it wrong. (unless your beer comes out bad every time.. then they may be right) | ||
